The Favorita, an indigenous Piedmontese white grape, has been present in this region since 1676, various official documents attest it. Genetically related to the Ligurian Vermentino, it is a luxuriant cultivar, with medium-sized gold-colored berries, someone also uses it as a table grape. The exposure of the vineyards is North West, they are on average 25 years old, and are placed at an altitude of 300 meters. They grow on a mainly calcareous surface and soil, with a high presence of quartz sand and very fine limestone, which alternate with compact layers of gray sandstone. The Marrone company vinifies it in purity, the grapes undergo a temperature drop of up to 6 ° C, which is essential to preserve the perfumes during pressing, the same takes place in a soft way, followed by a cold maceration in contact with the skins for 4 hours. Fermentation in steel at 16 ° C, aging on fine lees for a minimum of 5 months. The wine shows all the fragrance of its youth: from a chromatic point of view, a very light straw-colored, lively, with beige reflections, on the olfactory level, it is impregnated with exuberant nuances of crunchy and delicious fruit, banana, Williams pear, winter melon, but also marjoram, mint, hawthorn, almond and a mineral trace that recalls the calcareous soil. In the mouth it is a juice of fruits and salt, juicy, slender, dynamic, freshness in line with a flavor that lengthens the sip and makes it particularly pleasant, drinkable, far from trivial. Personally paired with a loin marinated with aromatic herbs, garlic and chilli pepper, grilled, a side dish of Romanesco cabbage, I would say a perfect match.
