Made from Pecorello grapes, an ancient grape variety of Calabria to be rediscovered and appreciated. For us at Ippolito, it is the pride of a passionate research. Manual harvest in early September, cold settling, fermentation in stainless steel tanks at controlled temperature, aging in stainless until the end of January. Bright straw, complex, Mediterranean and elegant on the nose, with notes of citrus, yellow-fleshed fruit and mineral tones. The palate is vibrant, balanced and persistent.
